He spent 6 years as head baker at La Mie Dorée, a Québec City bakery known for traditional French-Canadian pain de ménage. Thomas holds a Food Handler Certification and specializes in yeast-leavened and sourdough breads, with a deep understanding of fermentation, hydration ratios, and dough handling techniques suited to Canada's varying climates.
